Roland cooked this for dinner last night as we were expecting a few friends over for a game of mahjong. These friends of ours are super spicy chilli eaters. They requested for Roland's Spicy Chilli Pork but as we only had pork in the fridge, he used a spring chicken instead.
Roland and I had a good laugh as we were filming this video. Hope you will enjoy it as much as we did filming it.

INGREDIENTS
Serves 2 - 4
700g - 1kg of spring chicken or chicken parts
4 cloves of garlic
1 - 2 tablespoons of oil
10 pieces of chilli padi - quantity can be varied according to own preference
1/2 teaspoon bicarbonate of soda
1 tablespoon light soya sauce
4 caps chinese rice wine
2 caps shaoxing huatiao cooking wine
dash of pepper
1 tablespoon tapioca flour
200ml chicken stock
1/2 teaspoon sugar
Cornstarch solution to thicken the broth
